Beef Brunch Skillet with Egg (Print Version)

# What You Need:

01 - 9 oz ground beef or thinly sliced steak

→ Vegetables

02 - 2 medium potatoes, diced
03 - 1 small red onion, finely chopped
04 - 1 red bell pepper, diced
05 - 3.5 oz baby spinach
06 - 2 cloves garlic, minced

→ Eggs

07 - 4 large eggs

→ Spices & Seasonings

08 - 1 tsp smoked paprika
09 - 0.5 tsp ground black pepper
10 - 1 tsp salt
11 - 0.5 tsp dried thyme

→ Oils

12 - 2 tbsp olive oil

→ Garnish

13 - 2 tbsp chopped fresh parsley
14 - Grated cheddar or feta cheese (optional)

# Directions:

01 - Heat 1 tablespoon olive oil in a large oven-safe skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until golden and nearly tender, about 8–10 minutes.
02 - Add the remaining olive oil, onion, and bell pepper. Sauté for 3 minutes until softened.
03 - Stir in the garlic and cook for 1 minute, then add the ground beef. Cook, breaking up the beef, until browned and cooked through, about 5 minutes.
04 - Season with smoked paprika, black pepper, salt, and thyme. Mix well.
05 - Add the spinach and cook until just wilted, about 1 minute.
06 - Use a spoon to create four wells in the mixture. Crack an egg into each well.
07 - Cover the skillet with a lid or foil and cook on low heat until eggs are just set, 5–7 minutes (or transfer to a 350°F oven for 7–10 minutes for firmer eggs).
08 - Garnish with fresh parsley and cheese if desired. Serve hot.
