# What You Need:

→ For the Fries

01 - 4 large russet potatoes, scrubbed
02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried thyme
08 - ½ teaspoon cayenne pepper
09 - ½ teaspoon freshly ground black pepper
10 - 1 teaspoon sea salt

→ For the Spicy Mayo

11 - ½ cup mayonnaise
12 - 1 tablespoon hot sauce (sriracha or Louisiana hot sauce)
13 - 1 teaspoon lemon juice
14 - ¼ teaspoon smoked paprika
15 - Pinch of salt

# Directions:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - Cut the potatoes into ¼-inch thick fries. Soak them in cold water for 20 minutes to remove excess starch. Drain and pat dry thoroughly.
03 - In a large bowl, toss the dried potato fries with olive oil, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and sea salt until evenly coated.
04 - Arrange the fries in a single layer on the prepared baking sheet. Bake for 30–35 minutes, flipping halfway through, until golden and crisp.
05 - In a small bowl, whisk together mayonnaise, hot sauce, lemon juice, smoked paprika, and salt until smooth. Refrigerate until ready to serve.
06 - Serve the hot Cajun fries immediately with spicy mayo on the side.
