12 - 1 tbsp hot sauce (such as sriracha or Louisiana hot sauce)
13 - 1 tsp lemon juice
14 - ½ tsp garlic powder
15 - ¼ tsp smoked paprika
16 - Salt, to taste

# Directions:

01 - Preheat your oven to 425°F. Line a large baking sheet with parchment paper.
02 - Place the cut potatoes in a bowl of cold water and soak for 20–30 minutes (optional, for extra crispiness). Drain and pat dry thoroughly with a kitchen towel.
03 - In a large bowl, toss the fries with olive oil, smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, and salt until evenly coated.
04 - Spread the fries in a single layer on the prepared baking sheet. Bake for 30–35 minutes, flipping halfway, until golden brown and crispy.
05 - While the fries bake, mix all spicy mayo ingredients in a small bowl until smooth. Adjust seasoning and heat to taste.
06 - Serve the hot Cajun fries with spicy mayo on the side for dipping.

# Expert Tips:

01 -
  • The Cajun seasoning creates this beautiful deep red color that promises flavor before you even take a bite
  • These fries achieve that perfect crunch without deep frying, making them way less intimidating to make at home
  • The spicy mayo dip comes together in seconds but transforms the whole experience into something restaurant worthy
02 -
  • Drying the potatoes thoroughly after soaking is absolutely crucial, any remaining moisture will steam instead of crisp
  • Do not overcrowd the baking sheet or the fries will steam each other and you will lose that crunch factor
  • The seasoning might look heavy when you are tossing the raw fries, but it mellows during baking, so do not be afraid to coat them well
03 -
  • Cut your fries as uniformly as possible so they all finish cooking at the same time
  • Let the baking sheet cool slightly between batches if you are making multiple batches
  • The spicy mayo keeps in the fridge for about a week, so you can make it ahead
