01 - In a medium bowl or large jar, mix together the oats, milk, yogurt, grated carrots, sweetener, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir thoroughly until fully incorporated.
02 - Gently fold in the chopped walnuts or pecans, raisins, and shredded coconut if using. Distribute evenly throughout the mixture.
03 - Cover the container tightly and refrigerate for a minimum of 8 hours or overnight to allow oats to soften and flavors to meld.
04 - In the morning, stir the oats well. Add a splash more milk if a thinner consistency is preferred.
05 - Divide the mixture between two bowls or jars. Top with extra grated carrot, yogurt, nuts, or a drizzle of maple syrup as desired.
06 - Serve chilled and enjoy immediately.
