# Directions:

01 - Preheat oven to 375°F. Lightly grease a 1-quart baking dish with nonstick spray or butter.

04 - Stir in the sweet chili sauce, sriracha, lime juice, honey, minced garlic, smoked paprika, onion powder, salt, and black pepper until evenly incorporated.
05 - Gently fold in the cooked shrimp along with half of the mozzarella and half of the cheddar cheese. Mix until well distributed.
06 - Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining mozzarella and cheddar cheese over the top.
07 - Bake for 18–20 minutes, or until the cheese is bubbling and golden brown on top.
08 - Remove from the oven and let cool slightly. Garnish with sliced green onions and chopped cilantro. Serve warm with tortilla chips, sliced baguette, or vegetable sticks.

# Expert Tips:

01 -
  • The sweet chili and sriracha combination creates that addictive bang bang flavor without needing a deep fryer or any complicated technique.
  • Dual cheeses melting into a creamy shrimp base means every single bite pulls away with a gorgeous cheese pull that photographs beautifully.
02 -
  • Do not skip softening the cream cheese because cold lumps will never fully incorporate no matter how aggressively you stir and they will stare back at you from every bite.
  • The dip will seem very thick before baking but it loosens considerably in the oven so resist the urge to add extra liquid.
03 -
  • Reserve a few whole cooked shrimp to press into the top of the dip before baking for a presentation that looks like you tried much harder than you actually did.
  • Shredding your own cheese from a block melts far smoother than pre shredded bags which contain anti caking powders that leave a grainy texture behind.
