01 - Divide the ground beef into four equal portions and shape each into a patty approximately 1/3 inch thick.
02 - Generously season both sides of each patty with kosher salt and freshly ground black pepper.
03 - Preheat a skillet or grill over medium-high heat and add butter or neutral oil.
04 - Place patties in the heated skillet and cook for 2-3 minutes per side until browned and cooked through.
05 - During the final minute of cooking, place a cheese slice on top of two patties and allow to melt completely.
06 - Stack one cheese-topped patty with a plain patty, cheese side facing down, to create two double-patty stacks with cheese sandwiched between.
07 - Layer optional toppings such as pickles, tomato, grilled onions, and lettuce between patties if desired.
08 - Serve immediately while hot and cheese is melted.
