Creamy frozen Greek yogurt bites with peanut butter. High protein, gluten-free snack ready in minutes.

# What You Need:

→ Base

01 - 2 cups plain Greek yogurt (0% or 2% fat)
02 - 1/2 cup natural peanut butter (smooth or crunchy)
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon pure vanilla extract

→ Topping

05 - 1/3 cup dark chocolate chips (optional)
06 - 2 tablespoons crushed peanuts (optional)

→ Lining

07 - Paper mini muffin liners or silicone molds

# Directions:

01 - Line a mini muffin tin with paper liners or set out silicone candy molds for easy release after freezing.
02 - In a large mixing bowl, whisk together the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until the mixture is completely smooth and well combined.
03 - Using a small spoon or cookie scoop, fill each liner or mold with approximately 1 tablespoon of the mixture, smoothing the tops evenly.
04 - If desired, sprinkle the tops with dark chocolate chips and/or crushed peanuts, gently pressing them into the surface so they adhere.
05 - Place the tray in the freezer for at least 2 hours, or until the bites are completely firm and frozen through.
06 - Remove from the freezer and let the bites sit at room temperature for 2–3 minutes before eating for the creamiest texture.

# Expert Tips:

01 -
  • Each bite packs about 4 grams of protein, which makes them feel like an actual snack rather than just a sweet craving you will regret in twenty minutes.
  • No baking, no cooking, and barely any cleanup means you can make these on a Sunday evening while barely paying attention.
02 -
  • Do not skip the two minute thaw or you will be chewing on something that feels more like a hockey puck than a snack.
  • Regular yogurt will form ice crystals and ruin the creamy texture, so stick with Greek yogurt that has been properly strained.
03 -
  • Taste the mixture before you freeze it because that is your one chance to adjust sweetness or add a pinch of salt to balance the flavors.
  • Run warm water over the bottom of the silicone mold for a few seconds and the bites will pop out perfectly every single time.
