Funfetti Cinnamon Sprinkle Rolls (Print Version)

Soft, fluffy cinnamon rolls filled with cinnamon, rainbow sprinkles and a vanilla glaze—ideal for celebrations or brunch.

# What You Need:

→ Dough

01 - 3½ cups all-purpose flour
02 - ¼ cup granulated sugar
03 - 2¼ teaspoons active dry yeast (1 packet)
04 - ½ teaspoon salt
05 - ¾ cup warm milk (about 110°F)
06 - ¼ cup unsalted butter, melted
07 - 2 large eggs, room temperature

→ Filling

08 - ½ cup unsalted butter, softened
09 - ¾ cup light brown sugar, packed
10 - 1½ tablespoons ground cinnamon
11 - ⅓ cup rainbow sprinkles

→ Vanilla Glaze

12 - 1½ cups powdered sugar
13 - 2–3 tablespoons milk
14 - 1 teaspoon pure vanilla extract
15 - Additional rainbow sprinkles, for topping

# Directions:

01 - In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, active dry yeast, and salt until evenly distributed.
02 - Pour in the warm milk, melted butter, and room-temperature eggs. Mix using a dough hook attachment or wooden spoon until a sticky, cohesive dough comes together.
03 - Turn the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Transfer to a greased bowl, cover with a damp towel, and let rise in a warm spot until doubled in size, about 1 hour.
04 - Gently punch down the risen dough. On a floured work surface, roll it out into a 16×12-inch rectangle.
05 - Spread the softened butter evenly over the rolled-out dough. Sprinkle the packed brown sugar, ground cinnamon, and rainbow sprinkles in an even layer across the surface.
06 - Starting from the long side, roll the dough up tightly into a log. Using a sharp knife or dental floss, slice into 12 equal portions. Arrange the rolls cut-side up in a greased 9×13-inch baking dish.
07 - Cover the dish and let the rolls rise for 30 minutes until puffy. Meanwhile, preheat the oven to 350°F.
08 - Bake the rolls for 22–25 minutes until the tops are golden brown and the centers are cooked through.
09 - While the rolls are still warm, whisk together the powdered sugar, milk, and vanilla extract until a thick, pourable glaze forms. Drizzle generously over the rolls and finish with extra rainbow sprinkles. Serve warm.

# Expert Tips:

01 -
  • The sprinkle filling melts into little pockets of color that surprise you with every bite, making these impossible to resist.
  • They turn an ordinary weekend morning into something that feels like a birthday party with almost no extra effort.
02 -
  • Nonpareils, those tiny round sprinkles, will bleed into purple brown streaks during baking, so always choose jimmies for the filling.
  • If your kitchen is cold, turn your oven on for one minute then shut it off and place the covered dough inside for a reliable warm rising environment.
03 -
  • Do not rush the kneading because underworked dough will tear when you try to roll it and the texture will be dense instead of fluffy.
  • Let the rolls cool for just five minutes before glazing so the icing melts slightly into the rolls instead of sliding completely off onto the pan.
