# Directions:

01 - Combine plant milk and apple cider vinegar in a small bowl. Add mushroom strips and let marinate for 10 minutes to absorb flavor.
02 - Mix flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, black pepper, and dried thyme in a shallow dish. Place panko breadcrumbs in a separate dish.
03 - Dredge each marinated mushroom strip in the flour mixture, dip back into the milk mixture, then press firmly into panko breadcrumbs to coat evenly.
04 - Heat vegetable oil in a deep skillet over medium heat. Fry breaded mushrooms in batches for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
05 - Preheat waffle iron. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
06 - In a separate bowl, whisk plant milk, apple cider vinegar, melted coconut oil, and vanilla extract. Pour wet mixture into dry ingredients and stir until just combined.
07 - Pour batter onto preheated waffle iron and cook according to manufacturer instructions until golden and crisp.
08 - Whisk together pure maple syrup and hot sauce until well combined for a sweet-spicy drizzle.
09 - Place hot waffles on plates, top with crispy vegan chicken pieces, and drizzle with maple hot sauce. Serve immediately while hot.

# Expert Tips:

01 -
  • The mushroom texture gets so close to crispy fried chicken your doubters won't believe it's plants
  • That waffle batter comes together in one bowl with stuff you probably already have
02 -
  • Don't crowd the pan when frying, I've ruined too many batches trying to cook everything at once
  • Let the fried mushrooms rest on a wire rack instead of paper towels, they stay crispy longer that way
03 -
  • Use a paper grocery bag under your cooling rack, it catches the grease splatter and saves your stovetop
  • Warm your plates in the oven while everything cooks, hot food on cold plates is a crime
