01 - Combine dates and oats in a food processor. Pulse until a coarse, sticky mixture forms.
02 - Add peanut butter, cocoa powder, honey or maple syrup, and salt to the processor. Process until the dough begins to come together.
03 - Transfer the mixture into a mixing bowl. Fold in chopped peanuts and chocolate chips until evenly distributed.
04 - Scoop out tablespoon-sized portions and roll into balls using your hands.
05 - Place energy balls on a tray lined with parchment paper. Chill for at least 20 minutes to firm up.
