St. Patricks Day Lucky Chow (Print Version)

White chocolate peanut butter cereal mix with green candies and marshmallows

# What You Need:

→ Base

01 - 6 cups rice cereal squares (Chex)

→ Chocolate Mixture

02 - 1 cup white chocolate chips
03 - 1/2 cup creamy peanut butter
04 - 1/4 cup unsalted butter
05 - 1 teaspoon vanilla extract

→ Coating

06 - 2 cups powdered sugar

→ Add-Ins & Decorations

07 - 1 cup green candy-coated chocolates (green M&Ms)
08 - 1 cup mini marshmallows
09 - 1/2 cup gold chocolate coins, chopped or whole
10 - 1/2 cup green sprinkles or sanding sugar

# Directions:

01 - Place the rice cereal squares in a large mixing bowl, ensuring you have enough space to coat them evenly with the chocolate mixture.
02 - Combine white chocolate chips, peanut butter, and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until completely smooth and melted, approximately 1–2 minutes total.
03 - Stir the vanilla extract into the melted chocolate mixture until fully incorporated.
04 - Pour the warm chocolate mixture over the cereal. Using a spatula, gently fold and toss the cereal until every piece is evenly coated with the chocolate mixture.
05 - Transfer the chocolate-coated cereal to a large gallon-size zip-top bag. Add the powdered sugar, seal tightly, and shake vigorously until all cereal pieces are thoroughly covered in white powder.
06 - Spread the coated cereal onto a parchment-lined baking sheet in an even layer. Allow to cool for 10 minutes until the chocolate sets.
07 - Once cooled, add the green candy-coated chocolates, mini marshmallows, chopped gold coins, and green sprinkles. Gently toss to distribute all add-ins evenly throughout the mix.
08 - Transfer the completed Lucky Chow to an airtight container. Store at room temperature until ready to serve, ideally within 3 days for optimal freshness.

# Expert Tips:

01 -
  • The white chocolate peanut butter coating creates this impossibly creamy crunch that makes regular puppy chow taste plain in comparison
  • You get to feel like a kitchen magician turning everyday cereal into something festive and celebratory
02 -
  • If your chocolate mixture starts to seize and look grainy add a tiny splash of milk or cream while whisking vigorously to save it
  • Working quickly when coating the cereal matters because once that chocolate starts to set it becomes much harder to get even coverage
03 -
  • Use a really large bowl when coating the cereal because you need space to fold without making a mess or crushing the cereal pieces
  • If you cannot find gold coins chopped regular chocolate gold wrapped coins work just as well for that pot of gold effect
