Strawberry Oat Coconut Balls (Print Version)

No-bake strawberry oat and coconut bites - quick, nourishing, and easy to pack for an on-the-go snack.

# What You Need:

→ Dry Base

01 - 1 cup rolled oats (use certified gluten-free if needed)
02 - 3/4 cup desiccated coconut (plus extra for coating)
03 - 1/2 cup freeze-dried strawberries or 3/4 cup finely chopped fresh strawberries

→ Wet Binders

04 - 1/4 cup honey or maple syrup
05 - 1/4 cup almond butter or peanut butter
06 - 1/2 teaspoon vanilla extract
07 - Pinch of salt

# Directions:

01 - Add the rolled oats and desiccated coconut to a food processor. Pulse until finely ground and evenly textured.
02 - Add the freeze-dried strawberries, almond butter, honey (or maple syrup), vanilla extract, and salt to the food processor. Blend until the mixture is well combined, sticky, and holds together when pressed. If using fresh strawberries instead of freeze-dried, chop them very finely and fold them in by hand after blending.
03 - Scoop out tablespoon-sized portions of the mixture and roll firmly between your palms to form smooth, uniform balls.
04 - Roll each ball in extra desiccated coconut, pressing gently to ensure an even coating on all sides.
05 - Arrange the coated balls on a plate or tray and refrigerate for at least 30 minutes until firm. Serve chilled or at room temperature.

# Expert Tips:

01 -
  • No oven required, which means you can make these even on the hottest summer day without heating up your whole house.
  • They taste like a strawberry dessert but carry enough protein and fiber to qualify as a legitimate afternoon snack.
02 -
  • If the mixture feels too dry and crumbly to roll, add another half tablespoon of honey or nut butter and pulse again until it comes together.
  • Freeze dried strawberries work far better than fresh ones for consistent texture because fresh berries add moisture that makes the balls soft and perishable.
03 -
  • Measure the coconut you set aside for rolling before you start so you do not accidentally use it all in the mixture.
  • A small cookie scoop gives you uniformly sized balls without the mess of using your hands for portioning.
