- Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef, salt, black pepper, and smoked paprika. Sauté for 2 minutes, tossing to coat evenly.
- Add brown sugar or honey, soy sauce, minced garlic, and sliced red onion to the skillet. Cook, stirring frequently, until the beef is browned and the onions are softened, about 4 to 5 minutes. Remove from heat and set aside.
- Wipe the skillet clean. Place one flour tortilla in the skillet over medium heat. Sprinkle half of the mozzarella and cheddar blend evenly over one half of the tortilla.
- Distribute the beef mixture, sliced red bell pepper, and corn kernels over the cheese. Fold the tortilla in half to enclose the filling.
- Cook the quesadilla for 2 to 3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is fully melted.
- Remove the cooked quesadilla and repeat the assembly and cooking process with the remaining tortillas and fillings.
- Cut each quesadilla into wedges. Serve warm alongside sour cream, fresh cilantro, and lime wedges if desired.
