05 - Garnish with fresh mint leaves if desired. Serve immediately with a straw and spoon while the ice cream maintains its structure.

# Expert Tips:

01 -
  • Its ready in ten minutes flat, perfect for when guests arrive unexpectedly
  • The combination of creamy and fizzy feels like a carnival in a glass
02 -
  • Cold ingredients are non-negotiable here. Room temperature fruit and soda will make the ice cream disappear too quickly.
  • The puree can be made up to four hours ahead and kept chilled in the refrigerator.
03 -
  • Use a spoon to gently lower the ice cream onto the float instead of dropping it in
  • Layer the soda slowly down the side of the glass to maintain those beautiful swirling patterns
