Crispy Zaatar Pita Chips (Print Version)

Crispy baked pita triangles coated in za'atar spice, perfect for snacking or pairing with dips.

# What You Need:

→ Pita Chips

01 - 4 whole wheat pita breads

→ Za'atar Topping

02 - 3 tablespoons olive oil
03 - 2 tablespoons za'atar spice blend
04 - 1/2 teaspoon sea salt

# Directions:

01 - Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
02 - Cut each pita bread into 8 triangles. If the pita is thick, separate into single layers for extra crispiness.
03 - In a small bowl, combine the olive oil, za'atar spice blend, and sea salt. Stir until well blended.
04 - Lightly brush each pita triangle on one side with the za'atar oil mixture using a pastry brush.
05 - Place the pita pieces in a single layer on the prepared baking sheet, brushed side up.
06 - Bake for 10 to 12 minutes, flipping the chips halfway through, until golden brown and crispy.
07 - Remove from the oven and let the chips cool on the baking sheet before serving.

# Expert Tips:

01 -
  • They crisp up in under 15 minutes with almost zero effort, which makes them dangerously easy to make on repeat.
  • The za'atar coating transforms plain pita into something you will crave at midnight while standing in front of an open pantry.
  • They cost a fraction of store bought chips and taste infinitely better.
02 -
  • These chips continue to crisp as they cool, so pull them from the oven just before you think they look done or you will end up with over baked shards.
  • If your za'atar has been open for more than six months, toast it dry in a pan for thirty seconds to wake up the oils before mixing.
03 -
  • If your pita keeps tearing when you try to separate the layers, warm it in the oven for thirty seconds first and it will peel apart obediently.
  • Double the batch and freeze the unbaked, brushed triangles between sheets of parchment for fresh chips on demand any night of the week.
