02 - Crumble the completely cooled cake into a large mixing bowl, breaking it down into fine, uniform crumbs using your hands or a fork.
03 - In a separate bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract using an electric mixer until smooth and creamy.
04 - Add the cream cheese mixture to the cake crumbs and mix thoroughly with a spatula or your hands until fully combined. The mixture should hold together when pressed.
05 - Scoop approximately 1 tablespoon of the mixture and roll between your palms to form 24 evenly sized balls. Place them on a parchment-lined baking sheet.
06 - Transfer the baking sheet to the freezer and chill the cake balls for 20 minutes until firm to the touch, which makes coating easier.
07 - Melt the white chocolate or candy melts according to package directions. Dip each chilled cake ball into the coating, ensuring complete coverage, then return to the parchment-lined tray.
08 - While the white coating is still soft, pipe or carefully place a small circle of blue or green candy melt or colored icing in the center of each ball to form the iris.
09 - Once the iris has set slightly, add a small dot of dark chocolate or black candy melt in the center of each iris to create the pupil.
10 - Use red gel food coloring or decorating gel to draw small, squiggly lines radiating from the iris outward to create spooky blood vessel effects.
11 - Allow all decorations to set completely at room temperature or in the refrigerator for 15-20 minutes before serving. Best served chilled for optimal texture.
