Spooky vanilla cake balls coated in white chocolate with colorful iris details and red veins.

# What You Need:

→ Cake Base

01 - 1 box vanilla cake mix (approximately 15 ounces) or 400 g homemade vanilla cake
02 - 3 large eggs
03 - 1/2 cup vegetable oil
04 - 1 cup water

→ Cream Cheese Filling

05 - 3.5 ounces cream cheese, softened
06 - 3.5 ounces unsalted butter, softened
07 - 7 ounces powdered sugar
08 - 1 teaspoon vanilla extract

→ Decoration

09 - 14 ounces white chocolate or white candy melts
10 - 1.75 ounces dark chocolate or black candy melts
11 - 1.75 ounces blue or green candy melts or colored icing
12 - Red gel food coloring or red decorating gel

# Directions:

01 - Preheat oven to 350°F. Prepare and bake the vanilla cake according to package or recipe instructions. Allow the cake to cool completely before proceeding.
02 - Crumble the completely cooled cake into a large mixing bowl, breaking it down into fine, uniform crumbs using your hands or a fork.
03 - In a separate bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract using an electric mixer until smooth and creamy.
04 - Add the cream cheese mixture to the cake crumbs and mix thoroughly with a spatula or your hands until fully combined. The mixture should hold together when pressed.
05 - Scoop approximately 1 tablespoon of the mixture and roll between your palms to form 24 evenly sized balls. Place them on a parchment-lined baking sheet.
06 - Transfer the baking sheet to the freezer and chill the cake balls for 20 minutes until firm to the touch, which makes coating easier.
07 - Melt the white chocolate or candy melts according to package directions. Dip each chilled cake ball into the coating, ensuring complete coverage, then return to the parchment-lined tray.
08 - While the white coating is still soft, pipe or carefully place a small circle of blue or green candy melt or colored icing in the center of each ball to form the iris.
09 - Once the iris has set slightly, add a small dot of dark chocolate or black candy melt in the center of each iris to create the pupil.
10 - Use red gel food coloring or decorating gel to draw small, squiggly lines radiating from the iris outward to create spooky blood vessel effects.
11 - Allow all decorations to set completely at room temperature or in the refrigerator for 15-20 minutes before serving. Best served chilled for optimal texture.

# Expert Tips:

01 -
  • Theyre disturbingly adorable and vanish from party platters faster than ghosts at dawn
  • The sweet creamy center balances the crisp chocolate shell perfectly
02 -
  • If your cake balls start sliding off the dipping stick, chill them longer cold balls grip the coating better
  • The red gel works best when the white coating has fully set but the colored iris is still slightly tacky
03 -
  • Microwave the candy melts in thirty second intervals, stirring between each, to prevent seizing
  • Use a toothpick to drag the red gel outward from the center for realistic looking veins
